A "Winter Delights" Recipe: Bubble and Squeak Bites

Cozy food goes well with windy days, snowflakes or rain. I hope this delicious side-dish inspires your vegan eating. The recipe is also a PDF at the bottom of the page for easy downloads.

Bubble and Squeak Bites

Throughout much of the UK there are similar foods – colcannon, Bubble and Squeak, Rumpledthumps… They are all a way to use up the extra vegetables (potatoes and cabbage, etc.) from a meal.
These little bites are warming, delicious and cozy.
5-7 Yukon Gold potatoes, washed and chopped into quarters (peels on)
½ head of Savoy cabbage (can use green cabbage or Napa), washed and chopped into bite-size bits
2 heads of broccoli, washed and chopped into bite-size bits
plant-based milk ca. ½ cup
ca. 1 cup Panko Gluten-Free Bread crumbs
Olive oil, ca. 1-2 Tbsp.
Boil the potatoes until fork-tender. Then add the chopped broccoli and cabbage to the pot and blanch. Drain all veggies. Return the drained veggies to the pot and mash with a potato masher, adding splashes of plant milk, olive oil and salt and pepper to taste. Mash until a good, chunky consistency is achieved)

To make the bites, let the mixture cool lightly and roll into little balls. Roll each ball in breadcrumbs and bake at 350 degrees. 10 minutes per side.
